  • 500 g prawns

    30 ml oil 

    10 to 12 pcs large tree cucumber / Bilimbi, sliced (Kamias) 

    2 pcs ripe tomatoes, diced 

    1 bulb white onion, sliced 

    4 cloves garlic, sliced 

    900 ml water 

    40 ml fish sauce 

    1 pc small radish, sliced diagonally 

    5 to 6 string beans, 3-inch slices 

    1 bunch water spinach (Kang Kong), trimmed 

    4 pcs finger chilis

Sinigang na Hipon sa Kamias (Shrimps in Sour Bilimbi Broth)

Sinigang na Hipon sa Kamias, or Shrimps in Sour Bilimbi Broth, is a staple in Filipino cuisine and is considered to be one of the more popular comfort dishes. While tamarind is usually used to give this soup its signature sourness, you can use other fruits such as Kamias (Bilimbi), guava and santol (cotton fruit). In this recipe, Kamias is used as its flavor complements well with the shrimp due to its milder sour notes and fruitiness. However, if you’re not able to find any Kamias fruits nearby, you can always use a little vinegar.

Instructions

  1. Cook the broth

    • Heat 30ml oil in a deep pot over medium heat. 
    • Saute Kamias, diced tomatoes, onions and minced garlic for 5 minutes, or until tomatoes are wilted. 
    • Pour in 900ml water and allow it to boil for 10 minutes.

  2. Mash Kamias and season the broth

    • Remove Kamias from the pot and mash it with a fork and a strainer to extract the flavor. Continue to boil for 3 to 4 minutes. 
    • Next, season with 40ml fish sauce and add sliced radish and string beans.
    • Cover the pot with a lid and allow it to boil for a minute.

  3. Cook the prawns

    • Add 500g prawns and cook for 4 to 5 minutes. 
    • Add water spinach and finger chilis into the broth. Cover with lid and simmer for a minute.
    Cook the prawns


Plate and Serve!

Pour it into a serving bowl and serve with steamed white rice.
