  • 300 g egg noodles (Lomi)

    100 g pork belly (Liempo)

    100 g shrimps

    1 carrot, julienned

    50 g                   green beans, sliced diagonal

    75 g cabbage shredded

    1 L chicken stock

    45 g cornstarch

    8 cloves garlic, chopped

    1 bulb red onion, sliced

    30 ml vegetable oil

    2 eggs

    30ml soy sauce

     

  • to garnish:

    10 g spring onions, chopped

    10 g toasted minced garlic

Originating from the province of Batangas in the Philippines is Lomi, a Chinese-inspired noodle dish that is cooked in broth. Unlike most noodle dishes where the broth is light, the use of eggs and cornstarch slurry in this recipe makes the Lomi’s broth thicker. As it is quick and easy to prepare, Lomi can be eaten at any time of the day and even on special occasions when bigger batches are required in order to feed a large group of people.

Instructions

  1. Prepare the noodles

    • Drain and rinse the egg noodles under running water.
    • Set it aside.

  2. Cook the broth

    • Heat oil in a cooking pot over medium heat and sauté the red onion and garlic until aromatic for 2 minutes.
    • Add 100g pork belly and cook it over medium heat until brown, for 5 minutes. 
    • Add the 100g shrimps, carrots, green beans and shredded cabbage before pouring in the stock. 
    • Pour in chicken stock and bring it to a boil. Season with 30 ml soy sauce.
    • Add the noodles and allow it to cook for 8 to 10 minutes, or until you’ve achieved your preferred doneness of the noodles.
    Cook the broth


  3. Thicken the broth

    • In a separate bowl, mix 60ml water and 15g cornstarch to make a slurry.
    • Thicken the soup with the cornstarch slurry and add 2 beaten eggs. Continuously stir until the soup thickens, about 2 minutes. 
    • Pour it into a serving bowl.
     Thicken the broth


Plate and Serve!

Garnish Lomi with spring onions and toasted garlic before serving.
