Soft, chewy and gelatinous, Pichi-pichi is a well-known Filipino Kakanin (traditional dessert) that is made with cassava. It is also considered to be one of the easiest desserts to make as it only needs a handful of ingredients. While this recipe uses grated cheese as the topping of choice, you can use shredded coconut instead. Want to level up the appearance of this dessert? Try adding a splash of food coloring!

Instructions

  1. Prepare the mixture

    • In a large mixing bowl, combine 450g grated cassava, 175g white sugar, 400ml water, and lye, and mix well.
    • Allow it to rest for 10 minutes before pouring it into individual molds.

  2. Steam the mixture

    • In a steamer, pour a liter of water (or enough water) and bring it to a boil over medium-high heat.
    • Once the water is boiling, place the molds onto the steamer and steam for 25 to 30 minutes. 
    • Remove molds from the steamer and set it aside. Allow it to cool for 30 minutes before removing from the molds
    Steam the mixture
