A traditional Kakanin (rice cake) that can be found in a lot of markets in the Philippines, Palitaw is a white, flat and chewy rice cake that is made by combining glutinous rice flour with water. Palitaw is best served with grated coconut, sugar and sesame seeds, making this a delicacy that has both great flavor and texture. Serve this with tea and you’ll have yourself a delicious snack. Want your Palitaw to have some color? You can use ube to make a purple version!

Instructions

  1. Prepare the mixture

    • Combine 64g toasted sesame seeds and 250g sugar in a bowl. Set aside.
    • In another bowl combine 800g glutinous rice flour and 475ml water. Mix well until it forms into a dough.
    • Using your hands, portion and shape the dough into balls and flatten them into oval disks (about 6 - 8cm in length) and set them aside
    Prepare the mixture


  2. Boil and cook the dough

    • In a pot, pour 500ml water (or enough water) and bring it a boil on medium heat.
    • Gently add the dough into the boiling water and allow to cook for 5 minutes or until the disks float to the surface.
    • Remove them from the water and drain excess water.
    • Immediately roll it on the grated coconut until it is fully coated.
    Boil and cook the dough


Plate and Serve!

Sprinkle with toasted sesame seeds before serving.
