Most countries will have their version of banana fritters so it comes as no surprise that the Philippines has a variation as well! Maruya is a banana fritter that is made by frying mashed or sliced Saba bananas in an egg and flour batter. Unlike other bananas, the Saba variety is meaty enough for it to be perfectly fried without soaking up too much oil. Once fried, the fritters are rolled in sugar and can be served as a tea time snack.

Instructions

  1. Make the batter

    • In a bowl, combine 5g baking powder, 400g flour, and 15g sugar and whisk it till it is well incorporated.
    • Whisk 2 whole eggs and 60 ml water in and mix well until it forms a batter.
    • Dip plantain slices in batter and ensure the bananas are evenly coated.

  2. Fry the plantains

    • Heat oil in a pan over medium-high heat for 1 minute.
    • Fry the plantains in the pan for about 3 minutes or until brown.
    • Place it on a serving dish once it’s ready
