Southern Filipino Comfort: Law-Uy is Soup for the Soul

Originating from Mindanao, or Southern Philippines, the Law-Uy is a soup you need when your soul needs a hug. It is unique in its flavor and appearance -a soup of lemongrass with brightly coloured vegetables and topped with fish slices. For an extra pow, we recommend a touch of fish sauce to taste.

Instructions

  1. Deep fry fish

    • In a pot on medium heat half filled with hot oil, add red snapper slices and fry until lightly golden. Set aside.

  2. Boil Soup

    • In a pot on medium heat filled with boiling water, add lemongrass, zucchini, tomatoes, eggplant, okra and basil. Turn heat down to low and simmer for 15 minutes.
    • Season to taste with fish sauce, then remove from heat.

Garnish and Serve!

Garnish with red snapper slices and serve hot.
