    7 pcs bird’s eye chili, sliced

    96g brown sugar

    125ml calamansi juice

The Filipinos love their grilled meats, and fish is just one of the things that they’ve managed to barbeque well! Inihaw na Panga ng Tuna is tuna jaw that has been marinated in a seasoning blend made with soy sauce, brown sugar, bird’s eye chili and calamansi juice before it gets grilled over charcoal. While grilling tuna jaws might sound odd, they are actually full of collagen and will get juicy and tender when cooked. As soon as they’re off the grill, garnish them with a sprinkling of toasted garlic and serve with spiced vinegar dipping sauce.

Instructions

  1. Marinate tuna

    • In a deep container, combine soy sauce, minced garlic, sliced bird’s eye chilies, 1tsp black pepper and 125ml calamansi juice. Mix well.
    • Place tuna jaw into the marinade and let it marinate in the fridge for an hour.

  2. Grill the tuna.

    • Prepare a charcoal or an electric grill. 
    • Next, grill the tuna for about 5 to 7 minutes each side or until cooked, while occasionally basting it with the marinade.
    • Once it’s cooked, transfer to a serving plate.
    Grill the tuna.


Plate and Serve!

Garnish with toasted garlic before serving.
