Rice is such a key ingredient in Filipino food culture that you are most likely to find it in almost every dish for any dining occasion. From breakfast to dinner, you are bound to find rice or some derivative of it in your meal. Ginataang Mais is a pudding that is made up of rice, coconut milk and sweet corn. While it’s commonly served as a midday snack or an post-dinner dessert, this pudding can also be served warm if you’re looking for a satisfying and comforting meal on a cold day.

Instructions

  1. Cook the glutinous rice

    • In a sauce pot, combine 128g glutinous rice and 1L coconut milk over medium-low heat and allow it to boil for 12 to 15 minutes. Make sure to stir frequently to prevent the rice from sticking to the bottom of the pan. 
    • Let it cook for about 10 minutes or until the glutinous rice is cooked.

  2. Add corn and sugar

    • Pour 64g corn kernel and 64g creamed corn into the pot and stir.
    • Next, add 128g white sugar into the pot and stir until it has dissolved.
    • Allow it to simmer for about 5 minutes.
    Add corn and sugar


Plate and Serve!

Pour Ginataang Mais into a serving bowl and serve it warm.
