350 g shredded coconut
1 can any canned tropical fruit cocktail, drained (approx 450g)
200 g green nata de coco
200 g palm fruit (kong/attap seed)
200 g cheddar cheese (medium diced)
300 ml all-purpose cream
328 ml condensed milk
If you wish to add other diced fresh fruits into the salad like bananas and apples, drizzle and toss them first in lemon juice to prevent them from browning. Allow it to chill in the refrigerator for 8 hours, or 3 to 4 hours in the freezer before serving.
