  • 200g ketchup for dipping

    1tbsp oil (to grease foil for wrapping)

    500ml water (or enough for boiling)

     

  • pork mixture: 500g ground pork

    1pc green bell pepper, minced

    1 small piece   carrots, shredded

    100g pickled relish, drained and minced

    35g  raisins

    60g breadcrumbs

    3 eggs (beaten)

    2 eggs (hardboiled)

    7g salt

    3g black pepper

A common sight at special occasions such as Christmas and New Year’s Eve, Embutido is the Filipino version of meatloaf that is made up of ground pork, carrots, pickles and eggs. While you can easily get Embutido at the grocery store, why not treat your guests to a homemade version that is healthier and full of flavor? Simply make these ahead of time and freeze until you need them. Once defrosted, pop them in the oven or even fry them up to reheat.

Instructions

  1. Prepare the ground pork

    • In a mixing bowl, combine pork, minced carrots, pickled relish, minced bell pepper, 3 whole beaten eggs, and 60g breadcrumbs.
    • Mix well and season with salt and pepper.
    • Slice hard boiled eggs and add it into the bowl.

  2. Roll the ground pork

    • Brush foil with oil and place 3 to 4 tablespoons of seasoned ground pork on the foil.
    • Roll it into a log and fold the ends of the foil to keep it in intact.

  3. Steam and cook

    • Pour enough water into the steamer and bring it to a boil.
    • Once the water starts boiling, place the Embutido in and steam for 45 minutes to 1 hour till it’s cooked.
    • Set it aside to cool for an hour.

Plate and Serve!

Prepare a dish of ketchup as a dipping sauce before serving!
