  • 500g ground pork

    12 pcs green finger chili

    12 pcs cheddar cheese, sliced into sticks

    12 pcs Lumpia wrapper

    1 bulb white onion, minced

    5 cloves garlic, minced

    500 ml olive oil

    1tsp salt

    ½ tsp pepper

    100g ketchup

    100g mayonnaise

There’s Lumpia (spring rolls) and then there’s the Dynamite. A favorite among spicy food lovers, the Dynamite is a long green chili that is stuffed with pork (or beef) and cheese before it is wrapped in a spring roll wrapper and fried. As its name suggests, the Dynamite is named as such, not only because of the explosion of spice you get when you bite into it but also because the stem of the chili is left out of the wrapper, making it look like a stick of dynamite.

Instructions

  1. Prepare and stuff the chilies

    • Cut finger chilies lengthwise and scoop out the seeds - without chopping away the stalk.
    • Next, stuff chilies with ground pork and cheese.
    • Wrap individual chilies with a Lumpia wrapper and set it aside

  2. Cook the pork

    • Heat 30ml oil in a pan over medium heat and sauté minced onion and garlic for 2 to 3 minutes.
    • Toss 500g ground pork in and sauté for another 2 minutes.
    • Season with salt and pepper, stir and cook for 8 minutes.

  3. Fry the Dynamite

    • Heat 500ml olive oil in a pan in medium high heat for 2 to 3 minutes.
    • Fry wrapped chilies for 3 minutes on each side.
    • Drain excess oil in paper towels.

Plate and Serve!

Combine 100g ketchup and 100g mayonnaise as a dipping sauce to serve with your freshly fried Dynamite.
