Cheese Pimiento Spread

Known to be a comfort food for generations of Filipinos, the Cheese Pimiento Spread came about as a result of American colonialism in the Philippines. While the American version of this cheese spread has mayonnaise in it, the Filipino adaptation uses evaporated milk instead. There are many recipe variations out there, but the one here uses a combination of both cream and grated cheese, milk and red bell peppers. Spread on your favorite bread or crackers for an enjoyable afternoon or even as a midnight snack.

Instructions

  1. Mix cheese

    • In a bowl, combine cream cheese, cheddar cheese, and evaporated milk. Mix well.
    • Set it aside.

    • In the same bowl, add the softened butter and chopped red cherry peppers in and mix well.

Plate and Serve!

Season with salt and pepper and serve it as a dip or a sandwich spread.
