  • 500 g beef sirloin (sliced 1cm thin and 2 x 3 inches in width)

  • 60 ml cooking oil

  • 240 ml water

  • 1 large white onion (sliced into rings)

     

  • beef marinade:

    80 ml soy sauce

  • 8 calamansi (or 1 lemon)

  • 2 g ground black pepper

     

  • garnish:

    2 g scallions 

  • 4 to 5 pcs sliced onion rings

Thought to be the Filipino way of pronouncing the American dish ‘beef steak’, Bistek Tagalog is a type of beef stew that is popular in the Philippines and can be found on the menu of many carinderias (food stalls or roadside cafés). Thin beef slices are marinated in a citrus-soy sauce blend before cooked with lots of onion, resulting in a dish that is hearty and flavorful. Serve this up with a bowl of white rice for a quick lunch or dinner.

Instructions

  1. Marinating the beef

    • In a bowl, prepare the marinade by mixing 80ml soy sauce, 8 pcs calamansi (or squeeze 1 lemon) and 2g ground pepper.
    • Place the beef slices in the marinade and wrap the bowl with a cling wrap. 
    • Set aside and and allow the beef to marinate for at least 10 minutes.

  2. Frying the marinated beef

    • Heat 60ml cooking oil in a frying pan on medium-high heat for 2 minutes.
    • Remove the beef from the marinade and pour the marinade into a small dish. Fry the beef for a minute on each side. 
    • Set it aside after the beef is cooked.

  3. Braising the beef

    • In the same pan, deglaze it with 240ml water while scraping the brown bits from the bottom of the pan. Pour the marinade back into the pan.
    • Place the cooked beef slices to the pan and add the sliced onion rings. Cover and let it simmer for 10 minutes.
    • Pour it on a serving plate once it’s ready.

Garnish with more cooked onion rings and fresh scallions before serving it with rice.
