Bibingka is a sweet Filipino treat that actually originated in China. Brought to the Philippines by the Chinese, this humble rice cake is now a well-loved dish among locals and is traditionally served on Noche Buena, a special Christmas Eve dinner celebrated in the Philippines. I love this Bibingka recipe - with the classic flavors of rich creamy coconut mixed with a slight saltiness from the cheese and salted eggs. Usually cooked in clay pots and banana leaves, this soft spongy delight is a festive addition to any holiday menu.

Instructions

  1. Make the yeast mixture

    • Combine 64g warm water, 1 tsp sugar, and 2tsp yeast and wait till it foams


  2. Make the batter

    • In a bowl, combine the 640g rice flour, 1tsp salt, and 256g sugar and mix well.
    • Next, add the foamy yeast mixture and pour 640g of coconut milk in. Stir until it is well-mixed.
    • Rest the bowl of batter at room temperature for about 2 hours.
    • After 2 hours, pour the beaten eggs into the same bowl and stir until well-combined.
    • Grab a baking dish and line it with an aluminium foil. Pour the batter into it.
    • Gently place the salted egg slices on the batter.

  3. Bake dish

    • Place the baking dish in a 190°C oven and bake it for 20 minutes, or until the top is gold in color and the mixture is cooked.
    • Spread margarine immediately after cooking, and sprinkle it with sugar, grated queso de bola (edam cheese), coconut, and cheese on top.
