Tapa refers to meat that has been cured, usually with salt and a variety of spices, as a method of preservation. In this Filipino recipe, sliced beef is marinated with vinegar, soy sauce, garlic, black pepper and brown sugar. Flavored with a harmonious blend of savory, sweet, sour and spicy, this Beef Tapa is then quickly stir-fried for a fulfilling meal that is sure to tantalize your taste buds. You can also serve it with eggs, garlic fried rice and pickled papaya strips to create a popular Filipino breakfast dish called Tapsilog!

Instructions

  1. Marinate beef

    • In a bowl, add 4 Tbsp vinegar, 3 Tbsp soy sauce, garlic, 1 tsp black pepper, and 2 Tbsp brown sugar. Mix well.
    • Add sliced beef and mix well to coat evenly. Cover and set aside to marinate for 15-20 minutes.

  2. Stir-fry beef tapa

    • In a pan on medium heat, add 1 Tbsp vegetable oil. When hot, add beef tapas and stir-fry for 2-3 minutes. 

    Cook longer for a medium-well doneness.



Plate and Serve!

Serve with eggs and garlic fried rice, as well as atchara (pickled papaya strips) to create a popular Filipino breakfast dish called tapsilog!
