  • 1 kg beef short ribs

  • 8 cloves garlic (minced)

  • 1 L water

  • 500 ml beef stock

  • 2 potatoes (cut into quarters)

  • 1 carrot (diced)

  • 128 g tomato sauce

  • 5 pcs ripe sweet plantains (saba, cut into half)

  • 1 bunch bok choy (3 stalks)

  • 1 tbsp fish sauce

  • 1/2 tsp black pepper

Beef Pochero

Beef Pochero is a well-known Filipino stew of Spanish origins. This sweet and sour dish is almost similar to the Beef Nilaga (Boiled Beef Soup) if not for the addition of the tomato, Saba (sweet plantains) and a very Spanish ingredient - Chorizfo. While the recipe is pretty simple, be prepared to wait a while for your meal as you’ll need to let the beef simmer until tender. Pour into a bowl once ready and serve it with a side of rice - this makes it the perfect dinner to look forward to after a long day of work.

Instructions

  1. Cook the Beef

    • Heat oil in a pan over medium heat and sauté the onions and garlic until aromatic.
    • Stir the tomatoes in and cook until the tomatoes become mushy. 
    • Add the beef ribs and slightly sear it, about 5 minutes.
    • Next, pour water and beef stock in and allow it to simmer until the ribs are tender, about 40 minutes.

  2. Add vegetables and Saba

    • Add the potatoes, carrots, and tomato sauce in. Stir and let it simmer for about 7 minutes, until the vegetables are tender.
    • Season with fish sauce and pepper, and feel free to adjust and balance out the acidity of the dish to your preference.
    • Toss the Saba (sweet plantains) in. Stir and cook until it is tender, about 5 to 7 minutes.
    • Add Bok Choy in and turn off the heat. Cover the pot with a lid and let it cook for 3 minutes.

Garnish and Serve!

Pour it into a serving dish and serve it with a bowl of rice.
