Bananacue (Fried Plantains with Caramelized Brown Sugar)

Bananacue is a combination of Saba bananas and brown sugar, skewered and deep fried, usually taken during merienda or as an afternoon snack. It’s sweet and filling and can be eaten as a dessert or even on the go. Bananacue is a famous street food in the Philippines, you can find it in the corners of the street.

Instructions

  1. Coat the plantains

    • Coat the plantains evenly on all sides with brown sugar, and set it aside.


  2. Fry the bananas

    • Heat 1L olive oil in a wok over medium heat for 2 to 3 minutes until oil is hot.
    • Once the oil is hot, deep fry the first batch (4 pieces) of plantains for 3 to 5 minutes. 
    • Turn the heat to low and add 200g of brown sugar.
    • Continue to cook for 10 to 12 minutes or until the sugar caramelizes. Coat the plantains with caramelized brown sugar. 
    • Repeat till all bananas have been deep fried and coated with caramelized sugar

    Gently stir the plantains in the wok while cooking it with the brown sugar to coat them. Do not cook it on high heat as this will burn the sugar and turns bitter.

    | Instead of olive oil, you may use any cooking oil to fry the plantains.

    Fry the bananas


Plate and Serve!

Remove the fried plantains from the wok and skewer 2 pieces of plantains into a bamboo stick before serving.
