  • 1 white Onion

    5 Cloves Garlic

    1 Pcs Eggplant

    200g Squash

    3 whole Tomatoes, sliced

    1 Whole Bitter Gourd, chopped

    Mix with a pinch of salt and let stand for a few minutes

    100g String Beans

    8 pcs Okra

    1 Tbsp Vegetable Oil

    5 Tbsp Shrimp Paste

    Salt

    Pepper

Pinakbet means “shrunk” or “shrivelled” in the indigenous Ilokano language in Philippines, and is a really apt name for this healthy, steamed vegetable dish, where a colorful mix of eggplants, squash, bitter gourd, string beans and okra are simmered till soft and wrinkly. It’s a nutritious addition to any dinner table and is best eaten with steamed white rice.

Instructions

  1. Saute garlic & tomatoes

    • In a heated saucepan with oil, sauté onions, garlic and tomatoes.


  2. Add shrimp paste

    • Stir in shrimp paste, cook until aromatic.
    • Pour water in and bring to boil. Add in squash and then simmer until soft.


  3. Add in vegetables

    • Add in the rest of the other vegetables.
    • Season with salt and pepper.
