  • 200 g pork shoulder (or pork belly) sliced into thin strips 

    45 ml oil 

    4 cloves garlic, sliced thinly

    1 bulb onion, sliced thinly

    30 g ginger, sliced thinly

    1 stalk leek (white part only), sliced 

    10 g fermented black soybeans (or Tausi)

    1 large bitter melon (remove seeds and chopped into thin slices)

    60 ml soy sauce 

    200 ml water 

    15 g brown sugar 

    10 ml sesame oil 

    5 g cornstarch

    30 ml water

Ampalaya Con Carne (Pork with Bitter Melon)

Ampalaya con Carne is a Filipino dish where Ampalaya, commonly known as bitter melon, is stir fried with soy sauce and strips of meat - in this recipe, we’re using pork. To remove the bitterness of the Ampalaya, salt them for ten minutes and rinse off with cold water before cooking. Instructions

  1. Saute pork

    • Heat 45ml oil over medium heat in a pot and saute the pork for 4 to 5 minutes until brown.
    • Add the sliced garlic, onion, ginger, leeks and fermented black soybeans and stir-fry for a minute.

  2. Add bitter melon

    • Pour 60ml soy sauce, 200ml water, 15g brown sugar, and 10ml sesame oil into the wok. 
    • Bring it to a boil and stir for 1 to 2 minutes, or until sugar is dissolved. 
    • Add the sliced bittermelon into the pot. Cover the pot with a lid and allow it to simmer on high heat for 2 to 3 minutes.

  3. Thicken the broth

    • In a small sauce bowl, dissolve 5g cornstarch in 30ml water to create a slurry mixture.
    • Remove the cover and pour in the slurry to thicken the broth. Stir for another minute.

Plate and Serve!

Pour it into a serving dish and serve immediately.
