A dish synonymous to Filipino cuisine, you can’t say that you’ve had Filipino food unless you’ve eaten their famous Adobo. Preparing something Adobo-style involves marinating and cooking your main ingredient in vinegar, soy sauce, garlic, bay leaves and black peppercorns. Tender juicy pork is used in this quick and easy recipe, and while pork belly makes the dish more flavorful with ample amounts of fat, you can choose to go with a healthier option and use pork shoulder instead.

Instructions

  1. Marinate pork

    • In a large mixing bowl, add pork, 6 Tbsp white vinegar, 120 ml soy sauce and 2 Tbsp sugar. Mix well and set aside for 20 minutes to marinate.

  2. Fry pork

    • In a pan on medium heat, add 2 Tbsp vegetable oil. When hot, add garlic, bay leaves and black peppercorns and stir-fry for 30 seconds.
    • Add pork shoulder and 400 ml water. Cook for 10-15 minutes, or until greatly reduced.

Serve hot with rice!
