Ingredients

  • Serves 4 people
  • 1 white promfret (~ 700g, cleaned & patted dry)

  • ¼ tsp salt

  • 1 tomato (sliced into wedges)

  • 4 pickled, sour and salted plums

  • 100 g silken tofu (cut into small cubes)

  • 2 shiitake mushrooms (sliced thinly)

  • 4-5 slices ginger

  • 100 g preserved mustard (sliced)

  • 2 tbsp ginger (julienned)

  • Sauce: 

    4 tbsp water

  • 1 tbsp soy sauce

  • 1½ tbsp Shaoxing wine

  • 1 pinch sugar

  • Garnishing:

    1 scallion (cut lengthwise into thin strips)

  • 1 sprig coriander

Teochew Style Steamed Pomfret

The Steamed Pomfret is a true representation of Teochew cuisine –tasty, fresh and nutritious. Don’t be fooled by the clear broth and what seem to be plebeian ingredients, because this dish will shock your palette with its tangy, savory and spicy flavors. A truly simple dish to make, simply pile the ingredients onto the pomfret, pour the sauce and steam!

Instructions

  1. Prepare the fish

    • Score the fish on both sides from head to tailas if to fillet and debone it, but do not cut through.
    • Rub salt on both sides of the fish and set in a heat proof dish for steaming.
    • Insert 4-5 slices of ginger into fish belly.


  2. Arrange the steaming dish

    • Arrange the tomatoes, sour plum, tofu and mushrooms around the fishand place julienned ginger slices on top.

  3. Mix the sauce

    • In a small bowl, mix all the ingredientsfor the sauce and set aside


  4. Complete arrangement of steaming dish and steam

    • Scatter the preserved mustard on top and around the fish.
    • Pour sauce over the fish and then steam the dish for 15 min or until fish is thoroughly cooked.
    • Remove from steamer.

Plate and Serve!

Garnish and serve with steamed rice.
