300 g x 2 pc duck breast
pinch of salt to season
200 g yam (150 g cut into 1cm cubes, 50 g cut into thin strips)
½ tsp 5-spice powder
2 cloves garlic (smashed)
1” pc galangal (smashed)
1/2 tbsp white peppercorn (crushed)
350 ml water
2 tbsp light soy sauce
1 tsp dark soy sauce
50 g gula melaka (chopped into smaller pieces)
vegetable oil for deep frying
coriander for garnishing
red chili for garnishing
