  • 300 g x 2 pc duck breast

  • pinch of salt to season

  • 200 g yam (150 g cut into 1cm cubes, 50 g cut into thin strips)

  • ½ tsp 5-spice powder

  • 2 cloves garlic (smashed)

  • 1” pc galangal (smashed)

  • 1/2 tbsp white peppercorn (crushed)

  • 350 ml water

  • 2 tbsp light soy sauce

  • 1 tsp dark soy sauce

  • 50 g gula melaka (chopped into smaller pieces)

  • vegetable oil for deep frying

  • coriander for garnishing

  • red chili for garnishing

Peppery Yam Braised Duck Breast

Adding a twist to your usual braised duck breast, the sweetness of the gula melaka blends perfectly with the duck breast. To add onto the flavor, the pepper gives a kick to the taste, making this dish such a wholesome, yet special treat on the dinner table.

Instructions

  1. Preparing the duck

    • Score skin side of the duck breasts, season with a pinch of salt each. (a pinch of salt for each breast)

    You can replace duck with boneless chicken thigh

  2. Preparing the yam

    • Toss yam cubes with 5-spice powder.
    • Heat enough oil in a pan to deep fry the cubes till slightly crisp on the outside.
    • Remove yam cubes from oil and set aside on a paper towel to soak up excess oil.
    • Use the same oil to deep fry the yam strips till they are crispy. Remove from oil and set aside as garnish.

  3. Frying the duck

    • Heat 2 tbsp oil (from the deep frying oil) in a pan or wok and sear duck breasts skin side down till golden brown. 
    • Flip them over and add in the garlic and galangal to fry till fragrant

  4. Braising the ingredients

    • Add in crushed pepper and water, followed by both the light and dark soy sauce and gula melaka.
    • Stir to mix well and cover to braise over medium heat for 10mins.
    • Add in the fried yam cubes and continue to braise for another 5-10mins.
    • Remove cover and let the sauce reduce to a glaze over high heat.
    • Turn off heat and scoop the yam cubes on a dish. 
    • Slice the duck breasts and arrange atop the yam before serving


Plate and Serve!

Garnish with the crispy yam strips, coriander and chili.
