Old Cucumber & Pork Ribs Soup

Feeling all hot and bothered lately? Try the Old Cucumber and Pork Rib Soup, a Southeast Asian dish that is touted eliminate body heat and aids in detoxification. Light yet packed with flavor, the old cucumber with the addition of dried oysters, dried scallops, dried dates and dried figs give the soup its sweetness. Quick tip: use a thermal cooker! Cook and keep it warm for a few hours for a richer flavor.

Instructions

  1. Blanch pork ribs

    • Bring a pot of water to boil.
    • Add in ginger and pork ribs.
    • Allow water to boil again before removing.
    • Set aside


  2. Cut old cucumber

    • Cut old cucumberinto 3-inch sections. Remove seeds. Set aside.

  3. Boil soup

    • Bring 2.5L water to boil.
    • Add pork ribs, old cucumber, red dates, dried figs, dried scallops, dried oysters into boiling water.
    • Bring to boil. Then reduce heatto the minimum and let it simmer for at least 1.5hr.
    • Add wolfberries and salt to taste and turn off heat.
    Boil soup


Plate and Serve!

You can serve this with rice.
