  • 30 g fresh shimeiji mushrooms (1/3 pack) 

  • 4 big scallops  

  • 2 medium prawns 

  • 2 mussels 

  • 1/4 onion (sliced) 

  • 1 stalk parsley (minced) 

  • 1 tsp garlic (minced) 

  • unsalted butter 

  • 1 egg 

  • 4 tbsp heavy cream 

  • 1 tbsp cheese powder 

  • 100 ml white wine 

  • black pepper 

  • ½ tsp mala paste 

  • mala powder (to taste)

Mala Seafood Cream Spaghetti

Delicious, creamy and packed with bold flavours, this Mala Seafood Cream Spaghetti has everything you love in pasta –spaghetti with fresh seafood and mushrooms covered in a rich creamy cheesy sauce! The best part of this dish? It is an ideal quick and easy dish great for a busy workday meal, and fancy enough impress at a dinner party.

Instructions

  1. Cooking the spaghetti

    • Add 1.5 litres of water, 2 tsp of salt and 1 tbsp of olive oil to a pot.
    • Add spaghetti when water boils, cook for 8 minutes (see instruction on packaging).

  2. Cook seafood

    • Add 20 g butter, prawns and scallops to pan. Lightly fry until they brown lightly.
    • Remove from pan and set aside.

  3. Cooking the sauce

    • Add olive oil, onions and garlic to pan.
    • Add mushrooms when onions soften.
    • Add 2.5 tbsp of spaghetti water, add spaghetti, unsalted butter, heavy cream, cheese powder, white wine and mala paste
    • Add pre-cooked seafood and off the heat
    • Add an egg yolk and stir gently to combine everything

Garnish and Serve!

Carefully plate the spaghetti and top it with the seafood.Garnish with parsley and serve. Sprinkle more cheese and mala powder if desired.
