Ingredients

  • 1 tbsp roasted peanuts 

  • 3 tbsp light soy sauce 

  • ½ tsp dark soy sauce 

  • 1 tsp sugar 

  • 1 tbsp rice vinegar 

  • ¼ cup water 

  • 1 tsp cornstarch 

  • 1+1 tbsp oil 

  • 500g - 600g large king mushroom (diced) 

  • 3 slices ginger (minced)  

  • 3 cloves garlic (chopped) 

  • 4 scallions (white parts only, diced)

  • 1 tsp Sichuan peppercorns 

  • 8 dried chilli (soaked and cut into segments)

  • 1 cup diced red bell peppers 

  • ½ tsp sesame oil

Kung Pao King Mushroom

Be prepared to see mushrooms in a whole new light. The Kung Pao King Mushroom (not chicken, as the sauce is generally used for) is a spicy, saucy, stir-fry of pure mushroom bliss. Infused in the hot wok is a scatter of lip-numbing Sichuan peppercorns, which you can use less for milder heat. A dash of roasted peanuts and lifting sesame oil and you’ll never turn back.

Instructions

  1. Prepare the sauce

    In a bowl, mix together the light soy sauce, dark soy sauce, sugar, rice vinegar, ¼ cup water and cornstarch.



  2. Fry King Mushroom

    • In a wok, heat 1 tbsp oil over medium heat.  
    • Add king mushrooms and cook until they are caramelized and any liquid has cooked off .Set aside.

  3. Add in chilli, ginger, garlic, peppercorns & scallions

    • Using same wok, heat 1 tbsp oil, add ginger, garlic, scallions, Sichuan peppercorns and dried chilli.
    • Cook for about 1 minute, and take care not toburn the spices.Add bell pepper and continue to stir fry.Add the cooked king mushrooms.
    • Turn up the heat, and stir to mix everything together.  Add the prepared sauce (stir it again before adding into the wok, as the cornstarchwould have settled to the bottom of the bowl).
    • Stir everything together quickly.  Finally, add the roasted peanuts and sesame oil.
    Add in chilli, ginger, garlic, peppercorns & scallions


Plate and Serve!

Transfer into serving dish and serve with rice.
