1 tbsp roasted peanuts
3 tbsp light soy sauce
½ tsp dark soy sauce
1 tsp sugar
1 tbsp rice vinegar
¼ cup water
1 tsp cornstarch
1+1 tbsp oil
500g - 600g large king mushroom (diced)
3 slices ginger (minced)
3 cloves garlic (chopped)
4 scallions (white parts only, diced)
1 tsp Sichuan peppercorns
8 dried chilli (soaked and cut into segments)
1 cup diced red bell peppers
½ tsp sesame oil
In a bowl, mix together the light soy sauce, dark soy sauce, sugar, rice vinegar, ¼ cup water and cornstarch.
Transfer into serving dish and serve with rice.
