  • 4 duck breasts, skin on

     

  • For the sauce:

    4 tsp Chinese five spice 

    2 oranges, juiced

    2 star anise

    1 piece cassia bark

    1 knob ginger, julienned

    2 tbsp rice wine

    1 tbsp soy sauce

    1 piece orange peel

    2 tbsp brown sugar

    2 Oolong tea bag

    ¼ tsp white pepper

     


  • For serving :

    Boiled rice 

    Choy sum

Soy, Orange & Chinese Five-Spice Braised Duck is often found in many Chinese restaurants as a premium sharing dish, but with a little preparation and patience, you can recreate this fabulously aromatic and savory main at home to impress your family and guests. The ingredients are widely available in all Asian supermarkets, and you can even prepare your very own Chinese five spice mix to give this tender duck dish a unique twist.

Instructions

  1. Cook the duck

    • Using clean hands, cover the duck breasts with the Chinese five spice. 
    • Place the duck breasts skin side down on a cold pan. Then, bring the pan to medium heat, to render the fat. 
    • Cook for 6- 8 minutes fat side down and then continue cooking for a further 2-4 minutes until it's cooked to your liking. Remove from the heat and allow to rest for 5-10 minutes.


  2. Make the sauce

    • While the duck is cooking, in a separate saucepan over medium heat add the orange juice, star anise, cassia bark, ginger, rice wine, soy, orange peel, sugar, tea bag and white pepper. 
    • Bring to a gentle simmer and allow the sauce to reduce – this will take about 8 minutes.


Plate and Serve!

Serve the duck breast sliced with steamed choy sum, boiled rice and a generous amount of the orange and oolong sauce
