Healthy Beetroot Soup

Instructions

  1. Prepare beetroots

    • Wash and scrub beetroots.
    • Boil them in a pot of water for 1 hr.
    • Once cooled, remove skin after they are boiled.
    • Cut into chunks.

  2. Cut other ingredients

    • Cut carrots, yellow onions and leeks into pieces.


  3. Make soup

    • Heat up oil in a stock pot.
    • Fry onions, then add leek. Add carrots and beetroots.
    • Add stock and bring mixture to boil. Lower heat and simmer until carrots are soft.
    • Once the carrots are soft, using a hand blender, blend the soup into a creamy texture.Bring soup back to a boil and turn off the heat.
    • Add salt to taste.

Garnish and Serve!

Serve hot, garnish with a drop of sour cream, a dash of black pepperand mint leaf/coriander.
