500 g cherry tomatoes
250 g mandarin oranges
80 ml olive oil
1 tsp salt
½ tsp pepper
150 g feta cheese
7 g ginger, whole, lightly crushed
250 g fusilli pasta
2 cloves garlic, diced
25 g fresh basil
1 tsp sugar
Preheat the oven to 200°C
In a baking dish, toss the tomatoes and mandarin oranges with the olive oil and season with salt and pepper.
Then place the feta in the middle, turning it to coat both sides with oil. Place ginger on top of the feta. Bake for 30 minutes.
After 30 minutes, turn the heat up to 230°C and bake for another 10-15 minutes until the feta is golden brown.
When the feta and tomatoes are done, remove from the oven. Remove ginger and immediately add garlic and basil.
Stir everything together until the tomatoes, mandarin oranges and feta combine into a creamy sauce.
Devein the mandarin oranges to ensure its sweetness.
Cook the pasta according to the package directions.
Save 1-2 cups of the pasta water, then drain well.
Stir in the drained pasta until well coated and creamy, adding in a bit of pasta water to loosen if too thick.
Add sugar and mix to incorporate.
Taste and season with salt and pepper if needed.
