  • 2 tbsp light soy sauce

  • 2 tbsp dark soy sauce

  • ½ tsp chinese black vinegar

  • 1 tsp toasted sesame oil

  • 2 tsp sugar

  • 1 tsp chili oil

  • ⅓ cup (80g) hot water from cooking noodles

  • 1 pinch salt to taste

  • 1 pinch sesame seeds

  • Toppings:

    1 scallion, finely chopped

  • 30 g roasted peanuts, crushed

Spicy Taiwanese Sesame Noodles

Spicy Taiwanese Sesame Noodles is a popular Taiwanese street food. It is very quick to make and consists mostly of simple Asian ingredients and condiments. What makes it unique is its wheat noodles and sesame paste which leaves a nutty profile on your palate. Good as a hearty quick meal.

Directions

  1. Prepare sesame sauce

    • In a bowl, combine sesame paste, light soy sauce, dark soy sauce, black vinegar, toasted sesame oil, sugar & chili oil.

    One-to-one ratio of tahini & peanut butter in replacement of Zhi Ma Jiang or replace all with peanut butter.

    Chinese/Taiwanese Sesame paste (Zhi Ma Jiang) gives the distinct flavor of the dish. Its flavor profile is very different from tahini: tahini is made from unroasted & hulled sesame seeds, while Chinese/Taiwanese sesame paste is made from roasted & unhulled sesame seeds.

  2. Prepare the noodles

    • Cook noodles according to package instructions. Drain noodles & reserve the hot (starchy) cooking water.

    • Add a desired amount of the hot cooking water to the sesame sauce. Taste & adjust seasoning with salt.

Plate and Serve!

  • To assemble, place sauce in a bowl, place in noodles, mix & garnish with scallions, sesame seeds & crushed peanuts. Mix while still hot and enjoy.
