Thai Tea Boba Blondies

Who says you can’t have tea and cake in a single bite? With boba or bubble teas being all the rage, we decided to combine it with our favorite Thai Tea and turn it into a blondie. The result is a mix of flavors and textures that will definitely get you the thumbs up. Throw in some cinnamon, nutmeg or cloves for a more aromatic pastry with a hint of spiciness. You can even drizzle some condensed milk over your warm Thai Tea & Boba Blondies an extra indulgent treat!

Instructions

  1. Prep the White Chocolate

    • Place amixing bowl over a saucepan of simmering water.Add the white chocolate and stir until everything is melted.
    • Allow to cool.


  2. Mix the base ingredients

    • In a mixing bowl, add the butter, sugar, Thai tea powder, and eggs.
    • Stir well till evenly incorporated, then fold in the white chocolate.


  3. Mix in the flour and boba

    • Add the flour and baking powder and mix till just incorporated.
    • Remove about ½ cup (140g) of the mixture and set it aside for finishing.
    • Add the boba to the remaining mixture and mix till they are all separated and covered with batter (do not over mix).
    • Line a 9”x 5” inch loaf tin with baking paper and brush lightly with oil.
    • Pour the boba mixture into the tin, smooth and even outthe mixture.
    • Then evenly top with the 140g, non-boba mixture and smoothen with a spatula (there should be no boba seen on the surface).
    Mix in the flour and boba


  4. Bake and serve

    • Pre-heat the oven to 170⁰C.
    • Place in the oven and bake for 16-20 minutes, testing from 16 mins with a toothpick or cake tester tillit comes out almost clean.
    • Remove the blondies from the oven and allow to cool completely in the pan (45mins) before removing from the pan and cutting into squares.
    Bake and serve
