Sweet Corn Ice Cream with Grilled Peaches

While ice cream is something you usually buy or enjoy outside, you can actually make this creamy delight in the comfort of your own home. Here, I’ve got a simple recipe for Sweet Corn Ice Cream with Grilled Peaches that you can enjoy after your meals. I’ve kept some of the crunchy texture from the corn as a contrast to the ice cream, but feel free to blend the cream corn to a smoother paste if you prefer it to be less chunky. Serve this sweet treat with a side of caramelized peaches and mint for a satisfying finish.

Instructions

  1. Prepare the ice cream

    • Heat a pot of water on the stove till it reaches simmering temperature to about 85 – 95°C. You’ll know when it’s simmering when you see small bubbles streaming up to the surface.
    • In a mixing bowl, whisk the egg yolks, sugar, and vanilla essence and cream corn.
    • Put the mixing bowl over the pot of simmering water and continue to whisk for about 3 – 4min, until the mixture turns pale yellow.
    • Remove the mixing bowl from heat.
    • Add the salt and mix well.


  2. Complete the ice cream

    • With a food processor, blend the dry ice into powder. This allows it to blend into the ice cream mixture faster.
    • Pour the ice cream mixture into a stand mixer on medium speed.
    • Add the cream to the stand mixer and continue to mix.
    • Add the powdered dry ice, scoop by scoop, into the mixer. Make sure it is well combined.
    • Place the ice cream into your freezer for about 20min to allow the dry ice to completely sublimate into the ice cream mixture. 


  3. Blowtorch the peaches

    • Drain the peach slices of syrup.
    • Place the peach slices onto a baking tray.
    • Sprinkle brown sugar onto the halved peaches.
    • Blowtorch the peaches to caramelize the sugar. If you do not have a blowtorch, you can use a grill pan on the stove to get nice grill marks on the peaches.


Plate and Serve!

Placed the torched peaches in your serving bowl. Top with scoops of the sweet corn ice cream, some fresh mint leaves and it is now ready to serve!
