  • 60 g butter for frying (10g for each pancake)

     

  • plums stuffing:

    120 g sugar 

  • 60 g butter

  • 6 g salt 

  • 10 g cinnamon powder

  • 600 g red plums (pitted & sliced into chunks)

     

  • toppings (optional):

    butter

  • maple syrup

Stuffed Pancakes with Plums

If pancakes couldn’t get any better by itself, perhaps some jammy plums will do some good. First pitted and chopped into a chunky jam, a dollop is then dumped into the centre of a bubbling pancake mix and covered by another scoop of pancake mix. Once formed, cut in the middle and let the sweet sticky juices ooze out. And for a seriously good breakfast, drop a pat of butter and maple syrup and swipe it up all.

Instructions

  1. Making the pancake batter

    • Combine the flour, baking powder, 4g salt and 40g sugar in a bowl with a whisk.  In another bowl, combine the eggs, butter and milk with a whisk.

    • Add the wet ingredients into the dry ingredients a little at a time, whisk till nice and smooth.

    • Let the batter rest for 30mins

  2. Cooking the plum stuffing

    • Pour 120g sugar into a pan on low medium heat 

    • Let it melt slowly until light brown and do not stir (Creating a caramel)

    • Add the butter in, add 6g salt and cinnamon powder and stir

    • Add the diced plums in and cook for 10-15mins or until soft and sticky. 

    • Set aside to cool.

  3. Cooking the pancakes

    • On low-medium heat, grease a pan with 10g butter, and pour in ¾ ladle of pancake batter or approx. 1cm in thickness.

    • Wait for about 20-30 secs, scoop a tablespoon of sticky plums and place it in the middle of the pancake, and cover the top of the plums with a bit of more pancake batter.

    • Flip the pancake when its golden brown on 1 side. (Make sure both sides are golden brown)

    • Repeat process.

Serve with a slice of butter and drizzle with maple syrup
