380 g flour
24 g baking powder
4 g salt
40 g sugar
130 g melted butter
500 g milk
60 g butter for frying (10g for each pancake)
120 g sugar
60 g butter
6 g salt
10 g cinnamon powder
600 g red plums (pitted & sliced into chunks)
Combine the flour, baking powder, 4g salt and 40g sugar in a bowl with a whisk. In another bowl, combine the eggs, butter and milk with a whisk.
Add the wet ingredients into the dry ingredients a little at a time, whisk till nice and smooth.
Let the batter rest for 30mins
Pour 120g sugar into a pan on low medium heat
Let it melt slowly until light brown and do not stir (Creating a caramel)
Add the butter in, add 6g salt and cinnamon powder and stir
Add the diced plums in and cook for 10-15mins or until soft and sticky.
Set aside to cool.
On low-medium heat, grease a pan with 10g butter, and pour in ¾ ladle of pancake batter or approx. 1cm in thickness.
Wait for about 20-30 secs, scoop a tablespoon of sticky plums and place it in the middle of the pancake, and cover the top of the plums with a bit of more pancake batter.
Flip the pancake when its golden brown on 1 side. (Make sure both sides are golden brown)
Serve with a slice of butter and drizzle with maple syrup
