    250 g brown sugar 

    5 ml vanilla 

    500g crushed ice 

    60 - 75 ml evaporated milk per serving

Is the afternoon heat getting to you? A bowl of Saba Con Yelo might just be what you need to help you cool down! This well-known Filipino dessert or snack is easy to make and is made up of sweetened banana in brown sugar syrup and served on a bed of crushed ice. Evaporated milk is then poured in to give it its signature creaminess. Saba bananas are used as they are firmer and would not turn to mush when mixed with the syrup.

Instructions

  1. Cook the plantains

    • Boil peeled sweet plantains in 500ml water, 250g brown sugar and 5ml vanilla in a medium saucepan over high heat. 
    • Cover with lid and cook the plantains for 15 minutes. 
    • Remove plantains from heat and set it aside to cool. 
    • Pour the brown sugar syrup (remnants in the saucepan) into a bowl and set it aside.

    Choose ripe but firm sweet plantains (Saba bananas) in making this recipe. Overripe bananas are sweeter but it would turn mushy and pulpy when boiled with water.

  2. Assembling the Saba con Yelo

    • Scoop crushed ice on individual serving cups. 
    • Slice the plantains into bite-size pieces (about 7cm in length) and place on top of the ice. 
    • Add 60 - 75ml evaporated milk and syrup and adjust according to your preferred sweetness level.


Plate and Serve!

Garnish with a thinly sliced pandan leaves and serve chilled.
