1 oolong tea bag
4g (about 1 tea bag) of dried osmanthus flowers
110 g sugar
juice of ½ a lemon.
480 g water
5 g of agar- agar powder
Boil water and infuse oolong and Osmanthus tea bags.
And let it infuse for 5 mins
Remove Teabags. (Do not dispose the Osmanthus tea bag)
In the same pot, pour into the infused tea with sugar and lemon juice, bring it up to a boil.
Remove Osmanthus flowers from the tea bag add it into the pot.
Add in agar-agar powder and cook it for 5mins (Stir constantly on high heat)
Pour into a jar and let it cool in room temperature for 10-20mins.
After 10mins, take a spoon and mix the jam, ensuring all the Osmanthus flowers are spread evenly in the jam.
Chill it before serving.
