Nammoura (Lebanese Semolina Cake)

A sticky and sweet dessert from Lebanon, these decadent cakes made of coarse semolina are so simple to make that you can easily end up with more than enough to tide you through waves after waves of Eid visitors. By soaking the cakes in sugar syrup then topping them off with almonds or shaved coconut, you’ll be sure to get cakes that are not only rich but moist and full of texture as well! These desserts are delicious both warm or cold so you can make them ahead of time and serve once your guests arrive.

Instructions

  1. Combine semolina flour and yoghurt

    • Put the coarse semolina in a bowl.
    • Add the margarine and mix.
    • Pour the yogurt into a bowl, add the baking powder and mix
    • .Pour the yogurt mixture over the semolina and mix.

  2. Press semolina dough into tray

    • Add the coconut and mix.
    • Brush the tray with tahina and vegetable oil.
    • Put the semolina dough in a tray and flatten it.
    • Leave the dough for 5 hours

  3. Bake the cake

    • Cut the dough into squares.
    • Put an almond on every square.
    • Bake in the oven for 20 minutes at a temperature of 180°C.


Plate and Serve!

Pour the sugar syrup over the nammoura.
