  • 450 ml fresh milk

  • 1 tbsp lemon juice

  • grated zest of 1 lemon

  • 3 large bananas (thicky sliced)

  • 1 tbsp brown sugar

  • 300 g mango (thinly sliced)

  • 30 g butter

  • 30 g almond flakes

Mango Banana Custard

Instructions

  1. Preparing the oven dish

    • Grease a heatproof 29cm by 22cm oven dish with butter.


  2. Making of egg mixture

    • Sift flour into the bowl of an electric mixer.
    • Stir in salt and castor sugar.
    • Beat in eggs until just blended.
    • Heat milk until almost boiling before pouring into the egg mixture.


  3. Mixing and placement of ingredients

    • In a separate bowl, stir lemon juice and zest with sliced bananas and arrange at the base of the buttered dish.
    • Sprinkle with brown sugar and top with sliced mangoes.
    • Pour in the egg mixture and dot with butter.


  4. Baking of dish

    • Bake in a preheated oven at 220°C for 35-40 minutes until the custard sets and becomes golden brown.


Plate and Serve!

Sprinkle with almond flakes and serve warm.
