Mala Molten Lava Cake

Yes, you heard it right. Mala molten lava cake. The ooey, gooey chocolatey cake now spiced up with hints of mala, it's a mouthful of rich cakey goodness. Pair it with vanilla ice cream to calm your palette from the spicyness of the mala paste and cut the bitter sweet richness of the chocolate.

Instructions

  1. Preheat oven and butter ramekins

    • Pre-heat oven to 200 degrees C
    • Lightly butter and flour four ramekins. Gently tap out excess flour.

  2. Melt chocolate over double boiler

    • In a double boiler, over simmering water, melt butter with chocolate. 
    • Stir well but careful not to get any water in the mixture.


  3. Beat egg whites

    • In a bowl, beat eggs, yolks and sugar till thickened and pale. 
    • Add pinch of salt. Beat well.


  4. Fold chocolate mixture with whites

    • Fold in chocolate mixture. Combine well.
    • Add mala paste. Stir well.
    • Add flour little by little with folding well till batter is all mix.

  5. Bake lava cakes

    • Spoon batter into prepared ramekins and bake for 12 minutes or until sides quite firm but centres are still soft.
    • Remove from oven, and let cool for about 1 minute.
    • Using a plate carefully flip over the ramekin onto the plate.
    • Let stand for about 10 seconds before unmoulding.
