Kue Cucur is a traditional snack that is commonly sold at markets across Indonesia. While they have a thick chewy centre, these sweet fritters are thinner towards the edge, offering a satisfying crunch with each bite. Instructions

  1. Make flour mixture

    • In a medium pot, add water, brown sugar and pandan leaves.
    • Bring it to a boil and that the brown sugar is dissolved. Transfer out and let it cool to room temperature.
    • In a bowl, add rice flour, flour and salt. Take the cooled sugar water and gradually add it to the flour. Mix well.

    | Chef's Tips: When pouring brown sugar boiled water into the flour, make sure that the boiled water is really cold so it doesn't clot.

  2. Fry batter

    • In a round wok, heat up with some oil.
    • Add about 50ml of batter and fry till it’s cooked.
    • Repeat for the rest of the batter.
