Jam Cookies

Dimple your plain butter cookies with a squeeze of sticky jam. Eat them anytime you want a snack, or in our case, for a lovely treat at Iftar. The steps? Well if you’ve ever baked a cookie, it’s easy enough to do, with all basic cookie steps first, then a squeeze of sweet jam last. Of course, you can use peanut butter, chocolate, caramel or any type of sweet creamy spread that makes you happy. Make more and toast it in the oven for a warm jammy snack after a long day.

Instructions

  1. Mix the wet ingredients

    • In a mixing bowl, beat together butter and sugar with a hand blender until light and creamy
    • Add egg and mix well until combined before adding vanilla extract and mix well.


  2. Mix the dry ingredients

    • Add rice flour baking soda, baking powder and salt. Mix just until combined.


  3. Shape the Cookies

    • Preheat oven to 180c and line baking tray with baking paper
    • Using a teaspoon as a guide, scoop half a teaspoon of the cookie mixture and roll it in your hands to make a ball before placing it about 2" apart on a baking tray.


  4. Fill Cookies with Jam

    • Use your finger to make a depression in the center of each cookie 
    • Using a piping bag, fill each indentation with jam.

    | You can use any kind of filling for these cookies, jam, chocolate, peanut butter, caramel



  5. Bake

    • Bake the cookies for about 10 to 12 minutes, or until firm on top.
    • It should have a slight golden bottom.


Plate and Serve!

Allow it to cool before removing from the baking tray, as the cookies crumble easily while warm
