Halawet El Jeben (Sweet Cheese Rolls)

How do you make a dessert even better? A dessert that has cheese in it, of course! Said to have originated in Syria, Halawet el Jeben is a dessert that is both sweet and creamy. The outer layer is made of sweetened Akawi cheese and semolina that is rolled into fine sheets before being wrapped around fluffy and decadent clotted cream (ashta). Seal the deal and serve with a sprinkle of pistachio as a crunchy garnish and sugar syrup on the side. The velvety Halawet el Jeben is seriously addictive, so make sure you have some stomach space for more than one.

Instructions

  1. Make cheese filling

    • Boil the water in a saucepan then drain it.
    • Place the sieve in the saucepan.
    • Put the sweetened akawi cheese in the sieve.
    • Mix the cheese well until it thickens.

  2. Make dough

    • Add the fine semolina and mix.
    • Add the sugar syrup and mix till a dough is formed.
    • Brush the table with oil and butter.
    • Spread out the halawet el jeben dough using a rolling pin then cut a big square using a knife.

  3. Make halawet

    • Put the cream and the crushed pistachio on the edge of the square then roll the dough to form a cylinder.
    • Cut the cylinder into pieces of equal size using a knife.
    • Cover the two edges of each piece with crushed pistachio then flatten the piece.


Plate and Serve!

Put the pieces of halawet el jeben in a serving dish. Decorate each piece with lemon blossom. Serve with sugar syrup aside.
