  • 250 g unsalted butter

  • 130 g castor sugar

  • 2 eggs

  • 130 g plain yoghurt or sour cream

  • 260 g all-purpose flour

  • ¼ tsp salt

  • ¾ tsp baking soda

  • 2 cm fresh ginger (thinly shredded)

  • grated zest of one lemon

  • 100 g candied ginger (chopped)

  • 1 tsp ground ginger

  • 150 g candied orange peel

Instructions

  1. Preparing the batter

    • Beat butter and sugar until light and fluffy.
    • Add eggs one at a time, together with yoghurt


  2. Blending ingredients

    • Sift together the dry ingredients (flour, salt and baking soda) in a bowl.
    • Add fresh ginger, lemon zest, candied ginger, ground ginger and candied orange peel.
    • Fold in dry ingredients into batter a little at a time


  3. Baking

    • Pour the batter into a 22-cm greased loaf pan.
    • Bake at 175°C for 50mins
