Es Lilin is an Indonesian ice pop that resembles the shape of a candlestick. They come in many flavors and in this Es Lilin Kelapa Muda recipe, the flesh and juice of a young coconut is mixed with sugar syrup before it is frozen to make a refreshingly cool dessert.

Instructions

  1. Prepare coconut

    • Cut the coconut and set aside the coconut juice in a bowl.
    • With a spoon, shave the coconut meat and add it to the bowl with the juice.
    • Add liquid sugar and mix well

    | Chef's Tips: Sugar water can be replaced with honey or palm sugar

  2. Bag and freeze

    • In a food safe plastic tube bag or an ice mould, add the coconut water and seal it tight.
    • Put in the freezer and set it sit overnight.
