One of the many eye-catching dessert drinks from Indonesia, Es Doger is a refreshing beverage that consists of a colorful combination of chewy tapioca balls, fermented cassava, black glutinous rice and white bread soaked in coconut milk with sweet rose syrup. Topped with shaved ice, it’s a perfect way to cool down in the tropical midday heat.

Instructions

  1. Boil es doger

    • In a pot, add in the coconut milk, water, salt and sugar. Cook over low heat and bring it to a boil. Add the red syrup and stir consistently. 
    • Set aside to cool and put in the freezer.

    • After it freezes, remove and scoop it out like ice cream.

Chill and Serve!

In a bowl, add the ice with black sticky rice, bread, tapioca pearls and cassava tape. Serve.
