dough sticks:
360 g plain flour
240 ml milk
14 g veg oil
14 g baking powder
2 g baking soda
4 g salt
700 g of cooking oil (Frying the dough)
sticky plum sauce:
450 g red plums (pitted and chopped)
64 g brown sugar
10 g apple cider vinegar
6 g cinnamon powder
icing for garnish
Combine flour, milk, salt, baking powder, baking soda and veg oil into a bowl.
Start by kneading the dough with your hands till forms a soft and smooth dough
Cover and let it rest in the fridge for 1-2 hours
Roll and cut the divided dough into 10 – 12 strips.
Lay one strip on top of the other and use a chopstick/skewer stick to press in the middle.
Repeat the process until you have 5 dough sticks
In a pot, heat cooking oil to 180⁰C
Pinch both ends of the dough and stretch the dough to double its length. (Do not shape the dough larger than your frying pan.)
And slowly lower it to the fryer.
Once the dough floats up and its golden brown on one side, flip it with chopsticks to cook the other side.
Once golden brown on both sides, leave it on the plate to cool.
Pour plum sauce into a bowl and dust dough sticks with icing sugar and serve with plum sauce.
