  • sticky plum sauce:

    450 g red plums (pitted and chopped)

  • 64 g brown sugar

     

  • 10 g apple cider vinegar

  • 6 g cinnamon powder

  • icing for garnish

Dough Sticks with Plum Sauce

Red plums, bursting with sweet and slightly tart flavours, are perfect for jam. But it doesn’t just have to go on bread. Here, we’ve deep-fried some you tiao, or Chinese dough sticks to go along instead. These chewy-inside-crisp-outside you tiao pairs wonderfully with the sticky, intense plum dip and is great washed down with warm black tea. We’d recommend the orange-bergamot scented Earl Grey - a good one to add some citrusy lift to all that plum sweetness. Or, some strong English Breakfast Tea with a pour of milk works well too.

Instructions

  1. Making the dough

    • Combine flour, milk, salt, baking powder, baking soda and veg oil into a bowl.

    • Start by kneading the dough with your hands till forms a soft and smooth dough

    • Cover and let it rest in the fridge for 1-2 hours



  2. Portioning the Dough

    • Roll and cut the divided dough into 10 – 12 strips.

    • Lay one strip on top of the other and use a chopstick/skewer stick to press in the middle.

    • Repeat the process until you have 5 dough sticks

  3. Frying the dough

    • In a pot, heat cooking oil to 180⁰C 

    • Pinch both ends of the dough and stretch the dough to double its length. (Do not shape the dough larger than your frying pan.)

    • And slowly lower it to the fryer.

    • Once the dough floats up and its golden brown on one side, flip it with chopsticks to cook the other side.

    • Once golden brown on both sides, leave it on the plate to cool.

  4. Making the sauce

    • Pour the chopped plums into a pot along with the brown sugar, apple cider vinegar and cinnamon powder
    • Bring the pot to a boil and reduce the heat to low (Should be bubbling softly) 
    • Cook it for 20-30mins, stirring occasionally to avoid burning until it become thick and jammy.
    • Set aside to cool

Plate and Serve!

Pour plum sauce into a bowl and dust dough sticks with icing sugar and serve with plum sauce.
