If you’re bored of the typical donut recipe, this Donat Tape might be for you. Donat Tape is an Indonesian take on the sweet fried confection, using fermented cassava, or tape, as its main ingredient. Soft and chewy, it’s the perfect afternoon snack to serve when you have friends over. Just remember to rest your dough for 10 minutes to get the perfect pillowy texture.

Instructions

  1. Batter Ingredients

    • To prepare the dough, pour some warm water into a bowl, then add sugar and yeast, stir until well mixed. Cover it with wrapping plastic and let it set for about 15mins or until the dough bubbles to about 2 times larger than the initial size.
    • After 15mins, mix the yeast mixture that has been prepared before with ingredients (A). Knead it until half mixed then add grounded cassava tape (B) and knead it until well mixed altogether. Check the dough, it should not be sticky on the hand when it’s touched with no granules.
    • Let the dough rise, shape the batter into a round shape and let it sit for about 30 mins to get it perfectly raised or until the dough raised two times bigger.

  2. Doughnut Shaping

    • After the dough set, knead it again to release the air. Cut it into pieces into about 40g each piece. Shape the dough into round and place the dough onto the parchment paper or baking silicone sheet. Repeat steps for all dough.
    • After all the dough is shaped round, cover it again with cling wrap and let it sit for 10 – 15 mins then shape the donut using your fingers or donut shaper.

  3. Frying the doughnut

    • Prepare a fry pan with enough oil into it & preheat, After the oil is hot enough, fry the doughnut using chopstick and move it around so the donut hole remains open while it’s being fried. 
    • Fry it until it's well cooked and golden.
    • After all is done, lift it and set aside.

Assemble and Serve!

Prepare the serving plate, arrange the doughnut neatly and sprinkle some sugar powder and serve it !
