  • chai mix:

    12 cardamom pods 

  • 30 cloves 

  • 2 cinnamon sticks 

  • 3 star anise 

  • 15 black peppercorns

  • 3 tsp dried ginger peel 

  • 5 tsp orange peel 

  • 20 g loose leaf black tea

  • citrus masala chai:

    3 tsp chai mix 

  • 2 cups water  

  • ½ cup milk

DIY Citrus Masala Chai

Leftover citrusy peels? Use excess ginger and orange peels to flavour a delicious Masala tea, and as an air freshener for your kitchen. All you’ve got to do is brew a mug of deliciously spiced chai that’s made from a smatter of cardamon pods, sweet cinnamon, sharp peppercorn and a few more things. My version gives the traditional drink a refreshing edge with your unused citrus peels.

Instructions

  1. Dehydrate the orange and ginger peel

    • Lay the ginger and orange peel on a tray and dry them in the open overnight
    • Otherwise, you can do so in a 40C fan-forced oven for 60mins, or until dry

  2. Prepare the chai mix

    • With a pestle and mortar, crush the 5 dried spices until broken into rough chunks
    • Mix in a jar along with the dried ginger and orange peel, and the loose tea leaves

    | Play around with the ratios of the chai mix. If you’d like yours to be spicier, add more ginger and black pepper! (I also like to serve mine with a dash of freshly grated nutmeg)

  3. Preparing a glass of citrus masala chai

    • Heat the water in a small pot over medium heat. Bring it to a boil and simmer for 3 minutes


Brew and Serve!

Strain the tea into a mug and add milk and sugar to your preference
