Ingredients

  • Serves 4 people
  • 4 cups vegetable or canola oil for frying 

  • 1 cup water 

  • ½ cup salted butter 

  • 1 tsp vanilla extract 

  • ¼ tsp salt 

  • 1 cup all-purpose flour 

  • 2 large eggs 

  • chilli chocolate sauce:

    1 cup semi-sweet chocolate chips 

  • ½ cup heavy cream 

  • 1 tsp chilli powder

  • 1  bird eye chilli (sliced thinly)

Churros with Chilli Chocolate Sauce

Crispy on the outside, light and airy on the inside, freshly fried churros are a favourite treat in countries like Spain and Mexico. It is traditionally dipped in thick chocolate sauce, but we have spiced it up with a touch of chilli powder and bird-eye chilli! Here’s a secret that Spanish grandmothers will not share with you –churros are great for making ahead! Simply allow them to cool after frying and pop them as is in the refrigerator in an airtight container.When it’s time to have them, heat them up with an oven at 180 degrees until crisp!

Instructions

  1. Melt butter and combine with flour

    • Heat water, butter and salt in a pot. Leave it on heat till butter melts.
    • Add flour and stir well.
    • Turn heat off.


  2. Add in eggs

    • Add vanilla essence. Stir well.
    • While it is still hot, add egg one at a time, stirring well till it forms a smooth dough.


  3. Pipe dough and fry

    • Place the dough in a piping bag with a star nozzle tip. Set aside.
    • Heat oil under low medium heat.
    • Pipe dough of about 2-inch lengths into the hot oil. 
    • Using a scissor, snip dough.
    • Leave to cook till golden brown.
    • Using kitchen tongs, remove churros. Coat fried churros in a cinnamon sugar mix.


  4. Make chilli chocolate sauce

    • In another pot, over low heat, heat up cream.
    • Add chocolate chips. Stir well till chocolate melts.
    • Add chilli powder and bird chilli. Stir. Set aside.


Plate and Serve!

Serve churros with warm chilli chocolate sauce.
