Ingredients

  • rock sugar (to taste)

     

  • pandan pearls:

    a few pieces of pandan leaves 

  • 50 g potato starch 

  • sugar to taste

Barley Soya

A refreshing dish, it combines many widely known ingredients in Asian desserts! From pandan leaves to soya beans, there is a variety of fragrant ingredients that just makes this enjoyable. What’s amazing about this is the handmade chewy pandan pearls. The eye catching green color and sweet taste, remember to make more so you have one for every bite!

Instructions

  1. Soak beans overnight

    • Soak soya beans and barley overnight.


  2. Make pandan pearls

    • Blend pandan leaves in a glass blender and sift to get the juice.
    • Boil pandan juice with2 tbspsugarand 3 tbsp water
    • Add just enough boiling pandan water into the potato starch.
    • Mix until it forms a dough.
    • Roll with palm until long and thin.
    • Cut into small pearls.
    • Put the pearls into the boiling pandan water.
    • When pearls come to a boil, remove and immediately drop them into cold water.
    • Set aside
    • Add pearls into the barley soya only when ready to serve.


  3. Make soya milk

    • Remove the green skin of the aloe vera and cut the flesh to small cubes.
    • Blend soya beans with 2 cups of water in a glass blender until fine.
    • Strain to get the soya milk. Put it aside.


  4. Make barley water

    • Blend barley with just enough water. No sifting required.
    • Pour balance of water into a pot and add the blended barley.
    • Cook the barleyfor a few minutes until it dissolves and becomes smooth.
    • Add soya milk and rock sugar. Cook further until it comes to a boil.
    • Adjust the sweetness according to taste.


  5. Assemble drink

    • Add in aloe vera cubes and stir well. 
    • Add pearls into the barley soya only when ready to serve.
