Biskut Suji Pelangi (Rainbow Sugee Cookies)

Eye-catching and delicious, Biskut Suji Pelangi, or literally, sugar rainbow biscuits or rainbow sugee biscuits are for the most part, baked like regular biscuits. Here though, you can also use gluten-free flour and ghee in place of regular flour and butter. And then comes the fun. Decide on four food colorings and knead them into four separate dough balls, before combining into lovely rainbow ones. Finally, for a glittering crystal effect, roll them away in caster sugar.

Directions

  1. Mix The Ingredients

    • Heat oven to 130c 

    • In a bowl, add in the clarified butter and stir in the icing sugar until combined

    • Next add in the vanilla essence and slowly fold in the flour and baking soda until the mixture becomes a smooth dough

    • Roll the dough into a ball and divide it into 4 and place into its own bowl. Add one food coloring into each but leave one as a natural color and knead until the dough turns into desired colored ball

    • Substitute gluten free flour with normal baking flour if you prefer.

  2. Shape The Dough & Bake

    • Take a pinch of each dough and mix together until you get a nice round ball and place on a baking tray lined with baking paper

    • Bake in a pre-heated oven for about 10 minutes

    • Once cooked, remove the cookies and cool before rolling in caster sugar and placing into small cupcake cups
