How To: Make Suan La Fen Noodles

The first part to making China's wildly popular hot sour soup, or Suan La Fen Tang, is getting the glassy noodles right. And all you need are 3 ingredients: mung bean flour, salt and water. No kneading and pulling of noodles are required. Here, simply slide a grater across the block of solid “gel”to create silky thin strands of glass noodles that you can drop into the wonderfully hot sour soup, or any soup at all really. It's clean-tasting and absorbs all flavours like a sponge.

Instructions

  1. Preparing the Mixture


    • Take a bowl, pour in mung bean starch, salt and 250ml of the measured water. 
    • Mix till it is smooth.
    • Pour remaining 500 ml of measured water into a pot and bring it to a boil.

  2. Boiling the Mixture

    • When the water is boiling, turn off the heat, pour in the mung bean mixture in a little at a time into the hot water and stir until there are no more lumps using rubber spatula. (rubber spatula avoids adding too much air into the mixture) 
    • Turn on low heat and stir until mixture is starchy and translucent.

  3. Letting the mixture set

    • Immediately pour into a rectangular mould and let chill for 2 hours

  4. Grating the noodles

    • Using a fine grater (diameter of 0.4cm), grate long strokes to form the noodles.

  5. Reheating the noodles

    • When serving, just gently heat the noodles up for about 2 minutes in a pot of boiling water, as the noodles are already cooked.
